Singapore Eat: Maxwell Fuzhou Oyster Cake (洪家福州蚝饼) @ Chinatown

Maxwell Fuzhou Oyster Cake (洪家福州蚝饼), since 1962, is one of the many stalls in Maxwell Food Centre, next to Maxwell MRT Station. The stall sells only original Fuzhou oyster cake (or oyster puff), a traditional snack from Fuzhou, China, that is passed from generation to generation.


Maxwell Fuzhou Oyster Cake is added to the Singapore Michelin Guide recently in January 2024.

The oyster cake, with all its ingredients wrapped in flour batter, is deep-fried until its crust is dark brown and looks crispy even before taking a bite. Adding peanuts to the batter before frying has been a Fuzhou tradition.

The filling of the oyster puff contains minced pork, shrimp, oysters and coriander. The crispy crust with crunchy peanuts and fresh hot filling makes the oyster puff a tasty snack, even after meals.

Anthony Bourdain, the renowned celebrity chef, had coined Maxwell Fuzhou Oyster Cake's oyster puffs as "the nasty bits".
