Singapore Eat: Liao Fan Hawker Chan Soya Sauce Chicken Rice (Hawker) @ Chinatown Complex

Looking for the world's first and cheapest hawker stall to be awarded one Michelin Star? Look no further, this is the stall on the second floor of Chinatown Complex.


Formerly known as Liao Fan Hong Kong Soya Sauce Chicken Rice & Noodle (了凡香港油鸡饭.面), the business has been rebranded as "Liao Fan Hawker Chan". The hawker stall is still the main outlet and several branches (mostly restaurants) have sprung up in other areas of Singapore and also overseas in Southeast Asia, Australia and wider Asia.

Liao Fan serves its signature soya sauce chicken with rice or noodle. There are other roasted delights, such as char siew (barbecue pork), roasted pork and roasted pork ribs to pair with rice or noodle. Additional meat can also be added to any dishes. Vegetable dishes, such as beansprouts and seasonal vegetable, are available as side dishes.

The signature Soya Sauce Chicken Rice (油鸡饭) — opted for a chicken drumstick — is a simple dish with soya sauce chicken meat on plain rice that is dribbled with sweet-savoury braised sauce and soya beans. The chicken drumstick is the smoothest and most tender part of the chicken — the flavour and texture of the meat is so unforgettable.

Other than rice, pairing the soya sauce chicken with thin egg noodle (油鸡面) is another great way to try the dish. The springy noodle with its sauce offers additional taste and texture. Personally, I like the delicious soya sauce chicken with noodle.

I have been going for the soya sauce chicken with rice or noodle on every visit and still have not tried the other roasted delights. The best way will be to go for soya sauce chicken rice / noodle as usual and add-on another meat.
