Lam’s Signature Noodle & Salt-Baked Chicken (阿南面类.盐焗鸡) serves their self-innovated specialty noodle dishes and various dishes with salt-baked chicken. The brand has several outlets in food courts throughout Singapore and one of them is located in Koufu of West Mall, Bukit Batok.
Lam's Signature has several noodle dishes that are not typical dishes known to locals. They use Japanese flour noodle and handmade sauces for the dishes. Their signature salt-baked chicken is also served with rice / noodle / potato wedges or as whole chicken. Most of the ingredients are available as side dishes.
Lam's Signature Noodle (阿南招牌面) is served with a fried fishball, abalone stick, slices of lean meat, Japanese ramen egg, crispy fried pork lard, greens, on thin noodle in their specially concocted sauce. The special noodle has unique texture with slight chewiness and the abalone stick has a piece of scallop between two pieces of abalone in a light-tasting sauce. The ramen egg is tasty and delicious. This dish is really nice.
The Salt-Baked Whole (Chicken) Leg with Wedges (盐焗鸡腿+薯块) is served with lots of fried potato wedges with a flavourful chilli sauce and a bowl of soup. Although salt-baked, the savoury chicken thigh is not too salty and very succulent. The potato wedges are nicely fried and not salted so overall taste of the dish is well-balanced. Their handmade sour-sweet-spicy chilli sauce with parsley powder adds tastiness to the dish.
Lam's noodle and salt-baked chicken dishes are delicious and not too salty. I will definitely try all their dishes.
